Guinness BBQ Chicken

I did a little culinary experimentation last night and it turned out pretty good.

1 can Guinness
1/2 cu. BBQ Sauce
1 tbsp. Roasted Garlic powder
1 dash of Tabasco sauce

Mix the above ingredients and then pour over chicken (2 good-sized chicken breasts) in a shallow container and cover. Keep in the fridge until cooking time (4-6 hours).

When ready to cook, place chicken in a skillet with a cover and pour about half of the liquid mixture over the chicken.

Cook the chicken until done. If the liquid boils off too fast, cover.

When the chicken is done, remove it from the skillet and use the rendered down liquid as a sauce (add some water to skillet if mixture does not flow easily).

It’s a simple recipe and it turned out quite good. I have used Guinness as a base a few times now and am always happy with the results. It adds a smoky flavor to the chicken that is subtle, yet still noticeable. Sometime, when I am making this just for myself, I may try adding some habenero pepper sauce to the marinade for a little more kick… maybe more garlic too.
